Sweet Potato Fries

These are an easy to make side dish to any meal. They are baked not fried and you can control the spice – some like it hot and some not! The sweet from the potato and the heat from the spices makes for a delicious combination. The onion – well caramelized onions make everything taste better! You can make this same recipe with russet potatoes too, but I would cut them in wedges since they won’t hold up as well as the sweet potato does.

Here’s what you’ll need:

Large rimmed baking sheet
Umm yeah, that’s about it….

Ingredients

2 large sweet potatoes either cut into wedges or fries (whatever you prefer)
1/2 of a sweet onion sliced into half moons
1 teaspoon Chinese five spice powder
1 teaspoon chipotle powder – here is where you can control the heat
Olive oil
Salt and pepper

Preheat the oven to 375

Cut the sweet potatoes into your desired shape (be creative as you want!) I cut them into fries by squaring off the large sweet potato and then cutting them into sticks. Cut the onion and separate the slices so you have a bunch of u-shaped slices.

Put the cut fries and onions onto the baking sheet and drizzle with olive oil. Toss the potatoes – you want enough oil that the potatoes and onions are coated. Add the five spice, chipotle, salt and pepper. Using your God given tools (hands…) toss everything around so the fries are completely coated.

Shake everything into 1 layer. Cook for about 20 minutes, checking on them and shaking the pan to make sure that nothing sticks, and everything gets a chance to brown. Once your fries are soft, blast them with the broiler to caramelize the onions and potatoes.

Serve hot with whatever you want!!

Note – you can crank the heat if you want to cook them but just keep an eye on them because the sweet potato burns very easily. Also, this is a nice amount of fries for two people so adjust as you need for more. Rule of thumb for the spice is for every two potatoes added, add another teaspoon of spice. Enjoy!!!
