I make this recipe pretty much whenever I BBQ chicken but it also works very well on ribs. I will put the rib recipe up since the only thing that the chicken and ribs share is this spice rub. For this chicken recipe, I mix olive oil into the rub so that it’s a “wet” rub. I find if I don’t have the time to marinate the chicken overnight, the addition of olive oil makes the chicken flavorful in a shorter period of time. I don’t want to mislead you – dry rub overnight makes the skin crispy and flavorful – but this is great in a pinch!

Ingredients
6-8 bone in chicken thighs
1 teaspoons Cayenne pepper
1 tablespoon chipotle chili powder (adjust to your desire for heat)
1 tablespoon cumin
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon of coriander
2 teaspoons salt
¼ teaspoon of fresh ground black pepper
1 teaspoon oregano
2 tablespoons of Olive Oil
BBQ Sauce – to baste the chicken – use your favorite sauce. I use a mix of Stubs and Sweet Baby Rays.
Clean and trim the chicken and put it into a bowl. The chicken will stay in this bowl until you are ready to grill, so make sure the bowl the is non-reactive like stainless or glass.
Mix the dry ingredients and olive oil together and stir until it’s a loose paste. Pour the paste over the chicken and with both hands massage the paste into the meat – all over so that every piece of chicken is covered with the paste.
Cover and refrigerate for 2 – 4 hours. Now, when you are ready to go, take the chicken out and let it sit on the counter covered, while you light your grill – P.S. gas or charcoal are equally good.
Meanwhile, mix your BBQ sauce. You will use this on the chicken as it cooks on the grill. Every time you flip the chicken over, using a BBQ brush, “paint” the BBQ sauce on the side you are flipping. Do this every time you flip and flip every 8 minutes or so.
Once your grill has hit 400 degrees, put your chicken on the grill, skin side up. Paint the sauce and let it cook for about 8 minutes, then after one flip of the chicken, reduce the flame and bring your grill to a temperature between 350 and 400.
The chicken will be done in about 20 minutes, but make sure you use a meat thermometer and pull the chicken off when you are at about 165. Let the chicken rest 10 minutes and then serve it with your best fixins!
