My brother Peter and his family live in Tucson, Arizona. Other than Saguaro cacti and desert there are fruit trees (lemons, oranges and grapefruits) everywhere. The fruits are so abundant that people will just drop bags on their neighbors door step. My brother’s neighbor gave him a large bag of lemons. Without taking too much time, Peter knew what he wanted to do with all those lemons – preserve them. It’s not the 1st thing that would come to my mind. Actually, it would probably never come to my mind, but that is what makes the food world spin so perfectly!
Here’s what you’ll need:
A juicer – electric or handheld is perfect
Several flip top mason jars or ball jars, quart size
Ingredients
8 large lemons (for this recipe but if you have more just adjust as you go)
Approximately 1 cup of kosher salt – you may not need a whole cup.
Wash the lemons and juice 4 of the lemons. Take the rest of them and cut in quarters more than halfway through the lemon, just enough that the lemon doesn’t come apart. Hold the lemon as open as you can and stuff as much salt as you can into each lemon.
Take the lemons and put them into the jars – as many as you can fit without destroying them. Fill the jars completely with the reserved lemon juice and make sure that they are completely submerged.
Close the lid and put them in a cool dry place for 3 – 4 weeks and then you can refrigerate them before you use them. Make sure that when you are ready to use the lemons, rinse them thoroughly to remove all the salt. Now you are ready to go!
