Here’s a little recipe for a sauce we had while at Pikaia Lodge in the Galapagos Islands. This is not sauce for popcorn but instead sauce made with popcorn! I truly made this one up based on what we had at their amazing restaurant. Try it!
Here’s what you’ll need:
A blender
A fine mesh strainer
Ingredients
2 cups of popped popcorn
1 medium Shallot – minced
1 bay leaf
2 tablespoons butter
1 cup chicken stock
1 tablespoon each flour and water and mix into a slurry
Salt and pepper to taste
Sauté shallot in the butter with salt and pepper with bay leaf until shallot is softened.
Add the stock to the pan and scrape any bits stuck to the bottom of the pan
Simmer and reduce about 5 minutes – 8 minutes. Add slurry but watch to make sure that the sauce doesn’t get too thick. Add stock to keep it thin as needed
Scrap sauce into blender (remove the bay leaf) and add the popcorn. Blend until everything is incorporated. Taste for salt and pepper. Strain to remove any lumps and so the sauce is smooth
