All you need is a sharp knife, a cutting board and a good-sized bowl
(if you have a mandolin – this may be the time to break it out!!!)
1 half head – about 2 cups white cabbage – thinly sliced
4 spring onions (or scallions) thinly sliced
1 bunch of cilantro (aka coriander) washed and roughly chopped – you can leave some stems
1/2 cup of lightly toasted slivered almonds
1/4 cup dark soy
1/3 cup olive oil
Salt and Pepper
Toss the cabbage, scallions (or spring onions), almonds and cilantro together. Add the olive oil and soy, a little at a time to make sure you are making a slaw like consistency. You can always add more oil and soy, but you can’t take it out. Keep tossing to make sure everything is combined and taste along the way to keep up with any salt of pepper it may need.
Let is sit for an hour or so before serving.
