Ina says, and I agree, that you have to heat up your popover pan, don’t over fill the pan cups and DON’T PEEK!!!! Popovers are easy and so impressive to serve. I don’t normally make anything that requires special cookware but this is a special exception.

What you’ll need:
Do you have a popover pan? It’s what many call a unitasker. You can only make popovers in it – but you can use custard cups.

Ingredients
1 1/2 tablespoons unsalted butter, melted, plus softened butter for greasing pans/cups
1 1/2 cups flour
3/4 teaspoon kosher salt
3 extra-large eggs, at room temperature
1 1/2 cups milk, at room temperature

Preheat the oven to 425 degrees F.
Generously grease aluminum popover pans or Pyrex custard cups with softened butter. You’ll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek and holy cow – I made those?!!! Yes you did!

    Please help me…Love the Popover recipe…I have a popover pan similar to the one shown on this page…
    However..no matter how much I butter the pan…the bottoms always..always stick….On some of the
    pan cups..it looks like the teflon may be scraped off ….should I discard the pan & get a new one…
    Anything you could suggest would be appreciated…Sincerely, M. Callahan

      Hi! It sounds like it’s time for a new popover pan! Any good kitchen supply store will give you advice on which pan to buy, and when you do, make sure you let me know how the new pan performed!!!

    Tried about 4 popover recipes. Popovers never puff up for me. Don’t know what I’m doing wrong.

      Hi Loretta
      Make sure the pan is hot when you pour the batter in, and don’t overmix the batter. Also, most importantly, don’t open the oven to check how they are doing!!! A peak can make the difference between and fluffy and a flat popover! Try these tips, and let me know how it goes!
