Grilled Salmon

So, I have a confession…I really am not a fish lover or actually liker. I’ll eat salmon and halibut but that is pretty much it. Sushi? All day long. I know, I am ashamed. I do rally though since my wife is a crazy fish lover. I cook salmon this way and I actually like it enough to make it often. It’s easy, as most of my recipes are, and it’s good! Think about it – someone who really doesn’t like fish says that this recipe is good! You should try it!

What you’ll need:
Non-reactive pan for marinating
Grill – gas or charcoal

Ingredients
1 lb. of Salmon (I make 1 lb. for two people)
¼ cup of soy sauce
1 tablespoon siracha (more or less according to your heat level)
2 tablespoons of rice wine vinegar
1 teaspoon sesame oil

Mix all the ingredients together and add the fish to the marinade. Using a spoon to ladle the marinade over the fish until the fish is well covered with the marinade. Portion the salmon (or you can ask your fish monger to) and place in a non-reactive pan.

You can marinate the fish for thirty minutes to an hour. You can push the time but don’t forget that there is vinegar in the marinade, and it will begin to cook the fish.

Heat your grill to medium high and cook the fish skin down for four to six minutes. Flip the fish and cook for another six minutes. Adjust for you cooking preference. Less time for rarer, more for medium.

This is a great time to use that Cusabi Sauce that I posted!! Also, the cusabi sauce freezes like a champ so don’t fret if you made too much for your dinner!!!
