As we continue to shelter at home, the boredom is leading to kitchen creativity. Good for us, bad for our waistline but, quite frankly, it’s worth it! So after I bought a beautiful piece of cod from my local market, we decided to try and make a sauce that was close to the magic sauce from our trip to Panama. If you read that blog, you will remember that I had a fish sandwich which was, according to the restaurant, the greatest fish sandwich in the world…I heard a challenge right away. So we made our own tasting contest. I made two different sauces and we had to pick our favorite – and one was like the magic fish sauce.
First I made a rub for the fish. I basically cleaned out all the half and quarter bottles of all kinds of chili – hot Mexican chili, ancho, cayenne, mixed chili, paprika, cumin, garlic powder, salt, and pepper. I added a little olive oil to make a paste and coated the fish. I covered the fish and put it into the fridge for a few hours. Now the sauces.
For the first sauce – the magic sauce – I used sour cream, mayo, chopped capers, a little of the caper vinegar, dill, celery seed, salt and white pepper. For the second sauce I used sour cream, mayo, chopped pickled jalapeño, a small amount of siracha sauce, salt and white pepper.
One sandwich had arugula and one had mixed greens. I grilled the fish and dressed it with lettuce, tomato and the sauce on top and my spicey coleslaw on the bottom. There wasn’t a favorite – both where delicious!
