Eggs For Dinner

I first tried this dish when I was experimenting with using different spices and techniques. I also was looking for something easy to make for dinner that I can use an egg in! This dish satisfied all of it and it’s delicious! Also, all you need is a skillet!

Ingredients

  • 2-3 Tablespoons of olive oil
  • 1 large sweet onion
  • 1 red pepper or a handful of mini peppers about 4 or 5 – thinly sliced
  • 2-3 cloves of garlic – passed through a garlic press
  • 1 teaspoon cumin
  • 1 teaspoon sweet paprika
  • 1/2 or so cayenne pepper
  • 1 28oz can of fire-roasted diced with chilis or whole tomatoes
  • 1/4 cup of white wine
  • fresh spinach (optional)
  • 5 ounces feta, crumbled
  • 4 – 6 large eggs
  • salt and pepper
  • chopped cilantro

Preheat the oven to 375 degrees. In a large skillet over medium heat heat the oil and sweat the onion and bell peppers. Cook until they are soft – this can take up to twenty minutes. Add the garlic and cook for another two or three minutes. Add in the cumin, paprika, and cayenne. deglaze with the white wine and cook it out cook for a minute or two and add in the tomatoes and season with salt and pepper. Simmer for twenty minutes and keep tasting for salt level and heat. Stir in the feta and cilantro.

Make a well with the back of a spoon and crack your eggs into the tomato mixture. Season the eggs with salt and pepper. Transfer the skillet to the oven and cook the eggs are just set, about seven to ten minutes.
