Carolyn Bonheim's Biscotti
Ingredients
- What you’ll need: 3 8×3 loaf pans (you can get them in the supermarket)
- 4 eggs
- 2 cups of flour (all purpose)
- ½ teaspoon baking powder
- Dash of salt
- 1 stick of butter
- 1 ½ cups sugar
- 1 tablespoon vanilla
- 1 package Craisins or dried cranberries
- 2 cups walnuts
Instructions
Preheat oven to 350 degrees
Grease the loaf pans with butter
Cream the butter and sugar until its light and smooth
Add the eggs one at a time – beat until everything is incorporated and fluffy
Add vanilla
Sift together the flour, baking powder and dash of salt
Add the flour mixture slowly and at medium speed – or flour will be EVERYWHERE!!!
After the flour mixture is incorporated then add the nuts and cranberries
Distribute the batter evenly in the 3 loaf pans and bake for 35 minutes or until the loaves become golden brown
Cool loafs on rack in the pans until you can handle them and then turn the loaves out onto the cooling racks and cool them completely
Wrap the loaves in foil and freeze
After the loves are frozen, you are ready to turn them into biscotti
You can take out one loaf at a time from the freezer and preheat the oven to 350
Let the loaf stand for 5 minutes
Take a very sharpe knife and slice the loaf into 1/8th in slices
Place the biscotti on a cookie sheet and bake until golden brown
Notes
You can make these loaves and leave them in the freezer for months and take them out one at a time as you need them. Enjoy!
