Butternut Squash Soup

This is a nondairy and incredibly easy go-to soup for cold days. Make this when you don’t have a lot of time but want to have a warm and satisfying soup!

4 ½ cups cubed butternut squash (about 2 fresh squash peeled and cubed or 1 package of already cubed squash)
3 – 4 good size shallots finely chopped
2 tbl butter or 1 tbl olive oil
Vegetable or chicken stock (enough to cover the squash)
Cayenne pepper
Salt and pepper

Melt the butter or heat the oil in a heavy bottom soup pot or Dutch oven
Add the shallots and sprinkle with salt and pepper (the salt helps the shallot from burning)
Sauté over medium heat until the shallots become transparent and soft
Add in the squash and then add the stock to cover the squash entirely
Turn the heat down and let the soup simmer with the lid off for about 10 minutes or until the squash is soft

When the soup is done remove it from the heat and let it cool for a few minutes.
With a stick blender blend the soup until its smooth
Taste for salt and add cayenne to your taste

You can use pre-diced squash - make it super easy on yourself!
